Ingredients:

41/2cups(500g)flour,sifted

101/2oz(300g)leanbonelessporkormutton,minced

1tspsalt,ortotaste

61/2tbsp(100g)scallions,chopped

2tspginger,chopped

1/8tspfive-spicepowder

1/2tspMSG(optional)

Directions:

1.Mixtheflourwith31/2oz(100ml)ofwatertomakeadough.kneaduntilsmoothandletstandfor30minutes.

2.Topreparethefilling,mixtheporkormuttonwith7oz(200ml)ofwaterandthesalt.Stirinonedirectionuntilitbecomesapaste.Addthescallionsandblendwell.dividefillinginto100portions.

3.Dividethedoughinto4portionsandrollintolongrolls.Cuteachinto25pieces.Flatteneachpieceandrollinto2inches(5cm)circles.Place1portionoffillinginthecenterofeachwrapperandfoldthedoughoverit,makingabonnet-shapedpouch.Pinchtheedgestogethertosealthedumpling.Repeatuntilallthedoughandfillingareused.

4.Bring8cups(2litres)ofwatertoaboiloverhighheat,Addhalfthedumplings.Stirthemaroundgentlywithaladel,andletthewaterreturntoaboil.Addenoughcoldwatertostoptheboiling,thenbringbacktoaboil.Whenthewaterboilsagain,addmorecoldwaterandbringtoaboilathirdtime.Thedumplingswillbedonewhentheyfloattothesurface.Remove,drainwell,andserve.
