3.Dividethedoughinto4portionsandrollintolongrolls.Cuteachinto25pieces.Flatteneachpieceandrollinto2inches(5cm)circles.Place1portionoffillinginthecenterofeachwrapperandfoldthedoughoverit,makingabonnet-shapedpouch.Pinchtheedgestogethertosealthedumpling.Repeatuntilallthedoughandfillingareused.
4.Bring8cups(2litres)ofwatertoaboiloverhighheat,Addhalfthedumplings.Stirthemaroundgentlywithaladel,andletthewaterreturntoaboil.Addenoughcoldwatertostoptheboiling,thenbringbacktoaboil.Whenthewaterboilsagain,addmorecoldwaterandbringtoaboilathirdtime.Thedumplingswillbedonewhentheyfloattothesurface.Remove,drainwell,andserve.
